[Clas12_software] new default software versions

JDK 21 eliminates certain deprecated APIs and incorporates new features. Since CLARA utilizes protobuf and jeromq, any versions of these libraries depending on APIs deprecated or removed in JDK 21 could potentially result in runtime issues. To mitigate this risk, I recommend ensuring that you're using the latest versions of these packages and, if possible, compiling the protobuf and jeromq with JDK 21 to maximize compatibility.

As mentioned on our discourse forum, https://clas12.discourse.group/t/clas12-environment-update-prep/872/2, the default clas12 module (what you get when you "module load clas12" without specifying a version number) will change from 5.0 to 5.1 tomorrow morning, which includes:
* ccdb/1.99.2 → 1.99.6
* clas12root/1.8.4 → 1.8.5
* coatjava/10.1.1 →11.0.4
* denoise/4.1.0 → 4.2.0
* hipo/4.1.0 → 4.2.0
* iguana/0.7.0 → 0.8.0
* jdk/17.0.2 → 21.0.2
* mcgen/3.10 → 3.13
* mon12/7.2 → 7.10
* qadb/1.3.0 → 3.0.0
* rcdb/1.99.0 → 1.99.6
