It is a traditional Swedish food consisting of lightly fermented Baltic Sea herring. What makes it especially famous is the extremely putrid odor released when a new can is opened. A food critic once said: <em data-start="324" data-end="435">“The biggest challenge when eating Surströmming is to vomit only after the first bite, as opposed to before.”</em></p>
