Hi Morgan,

Here's what the datasheet/manual say for each of the sensors.

H2O
Flow Rate
1 to 5 Nl/min (2.1 to 10.6 scfh) mounted in standard sampling block 
0 to 10 m/sec (0 to 32.8 ft/sec) direct insertion

O2
Sample Flow Rate
1.0 SCFH (500 cc/min) recommended

So it probably would be best to use the rotameter / check valve setup (or at least something similar) that's already on them when you move them.
